A Few of My Favorite Things, Christmas Edition

Love this recipe.  Made this for Christmas Eve.
Butternut Squash Supreme (from allrecipes.com)


3 pounds butternut squash, peeled and
cubed
2 eggs, beaten
1 cup shredded Cheddar cheese
1 medium onion, chopped
3/4 cup milk
1 teaspoon salt
              1/4 teaspoon pepper
   1/2 cup crushed butter-flavored crackers
       2 tablespoons butter or margarine

1.Place squash in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until very tender. drain well and place in a large bowl; mash. In another bowl, combine the eggs, cheese, onion, milk, salt and pepper; add to the mashed squash and mix well.
2.Transfer to a greased 2-qt. baking dish. Sprinkle with cracker crumbs. Dot with butter. Bake, uncovered, at 350 degrees F for 40-45 minutes or until a knife comes out clean.

This was our Christmas gift from one of my brothers.  A lot of fun and reminiscent of the 80's. Lots of big hair!!  The light show and most of the music is great.

Gift from my bro and sis-inlaw.  Can't wait to start cooking!!


Chocolate Cracker Candy

Best Gift
My son gave me the best gift.  When I woke there was a note on my door with a clue.  The first "find" was chocolate covered pretzels.  2nd was a bottle of carbonated lemonade, 3rd was frozen pizzas and the 4th was my son to enjoy a movie night together.  It doesn't get better than that!!!!
